Gremolata

Serves: ¼ to ½ cup
- 1 cup parsley (or cilantro) leaves
- 2 cloves garlic
- 2 lemons (or limes if you use cilantro instead of parsley)---zest only
- Coarsely chop the parsley or cilantro.
- Mince the garlic cloves.
- Zest the lemons or limes.
- Add the minced garlic and zest to the pile of coarsely chopped parsley or cilantro.
- Finely chop the combined mixture.
